DESCRIPTION:
This is the highest grade of our 10-day-shaded organic Sencha. Its premium quality can be determined by its extremely fine and thin, tightly-rolled pin-shaped leaf, possible only when made with the tenderest leaves from spring harvest. Its profound dark green color is a result from the 10 days of shading before harvest. We use only the first few young leaves, as in Gyokuro, where the quality is the highest. This tea is lightly steamed for 30 seconds after harvest (Asamushi) to preserve its varietal character, giving it a clear golden infusion. It is skillfully ‘fired’ to give the tea its significant rich aromatic flavor. Our organic Kabuse Sencha Premium is often mistaken for Gyokuro as it has a deep umami taste which is equivalent to that of Gyokuro.
